Herb-Wrapped Beef Tenderloin
Herb-Wrapped Beef Tenderloin Herb-Wrapped Beef Tenderloin
Fresh ingredients and a lean cut of beef make this meal healthy and tasty!
SERVES: 4
PREP TIME: 15 Minutes
COOK TIME: 45 Minutes
Ingredients

2 (8 oz) tenderloin filets
2/3 cup chopped fresh herbs (like basil, parsley, thyme)
1 clove garlic (minced)
Juice of 1/2 lemon
2/3 cup panko bread crumbs
1/4 teaspoon freshly ground black pepper
4 seconds butter-flavored cooking spray (this helps brown the herb/crumb crust)

Directions
Step 1  Step 1:
In a small bowl, combine herbs, garlic, lemon juice, panko bread crumbs and black pepper. Mix to combine.
 
Step 2  Step 2:
Place 2 sheets of plastic wrap on counter and lay herb mixture onto plastic, spreading it to fit size tenderloins. Place tenderloins on top of herb mixture, then tightly wrap in plastic wrap, pressing mixture onto tenderloin. Let rest 5 minutes in refrigerator. While tenderloins rest, heat grill to high.
 
Step 3  Step 3:
Carefully unwrap tenderloins so herb crust is on top. Spray top with cooking spray for 4 seconds. Gently place it onto grill. Lower heat below tenderloins, leaving heat on in another spot so tenderloin cooks by indirect heat. Grill for about 20 to 230 minutes depending on desired degree of doneness and your grills heat.
 
Step 4  Step 4:
When tenderloins reach desired temperature, remove from grill, cover with foil and a towel or dishcloth and let rest at least 10 minutes. Slice thin pieces and serve immediately OR cool and refrigerate.
